Dutch hot dish wins the day at festival

The 6th Annual Fargo Hotdish Festival sponsored by Drekker Brewing Company and hosted at Brewhalla in Fargo, N.D., was held Sunday, February 4.

Cows & Company Creamery of Carrington, N.D., competed in the event and received the Grand Champion and People's Choice award.

Attendees had a chance to sample hotdishes from the fourteen restaurants that participated in the contest. They included Blackbird Woodfire, The Boiler Room - Fargo, Frank's Lounge, Nova Eatery Fargo, Marge's Diner, Mezzaluna, Nichole's Fine Pastry & Café, Tati's Mediterranean Saveur, The Bison Turf, The Toasted Frog - Fargo, Unicorn Park Fine Foodery, Würst Bier Hall - Downtown Fargo, 701 Eateries and Cows & Company Creamery.

Cows & Company responded to the following questions asked by the judges at the hotdish festival.

Dutch Stamppot meets Midwest Hotdish

What is the story behind your hotdish?

"The Traditional Dutch Stamppot is the national dish of the Netherlands which just happens to be the home country of Maartje and Conny (owners of Cows and Co Creamery). This Dutch comfort food consists of hand mashed potatoes and veggies served steaming hot with the finest wurst sliced on top.

"The team at Cows and Company decided we needed to take this dish and "beef it up" and of course "cheese it up." Beef, raised on our dairy farm and processed in Carrington, N.D., is seasoned with a Nordic blend of spices. Layered on top of our beef is the creamiest, cheesiest blend of mashed potato, kale, and leek. That's right, we added veggies so skip the salad tonight! Finally, crisps made with our artisan farmstead Old Gouda (aged 12-18 months) top our hotdish. Beef, Cheese, Potatoes... Does it get any more Midwestern than that?"

"Hotdish Festival 2024 is our first entry in the mother-of-all hot dish competitions. This dish was created only for this competition. If it is a hit, we may turn it into a frozen take and bake meal.
